We tend to get an overabundance of papaya at our house and found that we like it much better as a vegetable than as a fruit.
Here’s how we like to prepare it.
- Peel, seed and dice papaya.
- Boil diced papaya in salted water for about 20 minutes, drain.
- While papaya is boiling, place about 2 Tablespoons of oil in large frying pan. Heat over medium-high heat. Add chopped onion and garlic and brown slightly.
- Add drained papaya, red and green pepper and sauté for about five minutes.
- Add sliced mushrooms and sauté a couple of minutes longer.
- Add diced tomatoes complete with juice from the can.
- Cook over medium heat for about five minutes. Salt and pepper to taste.
- Sprinkle Romano cheese over the top and allow cheese to melt slightly.
- Serve immediately.
