    Hi melbi86,
I must admit I have never tried fresh cream.
If you are looking for an alternative to mayonnaise, then how about cream cheese.

Hi Chef…I actually never thought of using creme fraiche instead of mayo…is this the type of setups at grocery stores or SUBWAY ? I like subways tuna but it seems like they overmix theirs.

is that fresh fish or canned?
what would work best if canned
    packed in oil or water?
i tried to make it one time with the one packed in water and it turned to mush!
but oil seems to work much better
